Simple Ketogenic Pancake

This is another must have recipe if eliminating grains and controlling carbohydrates.  This is absolutely my go-to breakfast treat and I am very deliberate about calling it a treat and not a cheat!  This recipe is very dairy intensive, it is super important to focus on using quality grass-fed, pasture-raised and organic ingredients.  That being said, have a look and enjoy!

 

 

 

Ingredients:

 

Pancake Batter

 

- 4 oz Organic Valley Cream Cheese

- 4 Pasture-Raised Eggs

- Simply Organic Cinnamon (to taste)

- 10 drops Simply Organic Vanilla Extract (to taste)

- 10 drops Organic Vanilla Stevia Extract (to taste)

- 1 Tbsp Kerrygold Butter

 

Topping
 

- 2 oz Natural by Nature Organic, Pasture-Raised Heavy Cream

- Organic Vanilla Stevia Extract

- 1 Tbsp Kerrygold Butter

 

Instructions:

 

1) Blend all ingredients, except butter, in Magic Bullet.

2) Heat butter in Orgreenic pancake pan on medium-high heat.

3) Add thin layer of pancake batter to pan and cook for ~1 minute per side (or until golden brown).b

4) Whip up heavy cream and stevia in Magic Bullet.

5) Enjoy!
